Mousse au Chocolat Noisette et Orange features Araguani 72% Valrhona dark chocolate, crafted from hand-picked Venezuelan cacao beans renowned for it’s full-bodied taste, with sweet spice and woody notes.
Chef Makoto creates a hazelnut praline and
cookie crunchies base made from crushed royaltine and white chocolate, layered with chocolate
sponge, chocolate mousse and vanilla cream, harmonised with French orange in the middle. The
cake is finished with a glistening chocolate glaze, edible gold flakes, and a delicate chocolate cookie
tuile.
